Photos
A full powerpoint page is 1000 pixels by 750 pixels at 100 ppi. Make sure to not make images any larger than that.
Images should be as large as necessary so that the whole room can see them.
Video
A minimum of 640x 480 should be used, but up to 1000x750 pixels can be used.
